Baked “Doughnut” Muffins

½ cup butter, unsalted
1 cup milk
1/3 cup sugar
1 tsp salt
2 tsp active yeast
3 cups unbleached baking flour (I used 2 white/1 wheat)
1 egg
¼ tsp vanilla extract
¼ tsp almond extract

Coating (optional):
½ cup sugar + 1 tsp cinnamon

Maple Glaze (optional):
2 tbs butter
2/3 cup powdered sugar
½ cup real maple syrup
¼ tsp almond extract

Place all ingredients in bread machine in order recommended by manufacturer. I do dry on bottom, wet on top. Put on dough cycle and press start. Once cycle is finished, remove dough and lay on flowered flat surface. Use sharp knife to cut into 12 equal pieces. If coating with cinnamon/sugar, roll balls of dough in mixture before placing in greased muffin pan. Cover with towel and let rise at least additional 10 min. May be risen longer. Bake at 375 degrees F for 15 min. Remove from pan and let cool. Once cool, maple glaze may be applied.

Directions for maple glaze:
In glass or ceramic bowl, melt butter in microwave.  Once melted, stir in the remaining ingredients.
